Winemaking
Padthaway experienced cool and mild conditions in the lead up to Vintage 2023 with flowering finishing around 10 days later than usual. Favourable weather in the summer, with only 12 days above 35°C and less than 9 mm rain until the end of January produced wines with optimal acid and fruit flavour. Harvested in mid-April, our Shiraz parcel was destemmed, crushed, and fermented in Potter vats at 25°C with regular pump overs, to maximise colour extraction and preserve fruit flavour. Once dry, the parcel was pressed, racked and seeded for malolactic fermentation, ahead of maturation in French and American oak. Prior to bottling, the parcel was blended, stabilised and filtered ahead of release in the Spring of 2024.
