Winemaking
Outback Jack Shiraz was grown in the
inland areas of South Eastern Australia, where warm and dry conditions enabled
development of optimum ripeness and fruit flavour. Machine harvested in the
early hours during late February to mid-March, our Shiraz parcels were
destemmed, inoculated with specialised yeast selected to enhance red fruit
flavours and fermented in stainless steel vats. Moderate temperatures and regular
pump overs ensured optimal colour and tannin extraction. Once dry, the parcels
were pressed, racked and seeded for malolactic fermentation, ahead of maturation.
Careful blending and bottle conditioning prior to release ensures a balanced
wine ready to consume.

This wine has been made to drink now and will cellar for up to 5 years.
