The warm and dry conditions of Vintage 2025 lead to optimum ripening conditions and production of pristine parcels of fruit. Harvested in the early hours of the morning to preserve fruit vibrancy, the fruit was chilled, destemmed and pumped into a specialized ganimede fermenter for primary ferment. Inoculation with a
Burgundian yeast strain ensured a fruit forward bouquet and ample glycerol
production. After 8 days on skins the parcel was pressed, spending a short time on yeast lees, prior to filtration, bottling and release in the winter.
Peak drinking
Carefully made to enjoy now but will benefit from careful short-term cellaring.
