Winemaking
The warm and dry conditions of Vintage 2025 provided
optimum ripening conditions for our pristine parcels of fruit. Select vineyards
in the Riverina make up the fruit for Head over
Heels Pinot Grigio, and once physiological ripeness was attained, harvest was
scheduled the cool of the night in February. Fermentation was undertaken in
stainless steel vats at cool temperatures using specialised yeast strains selected
to promote fruit forwardness and mouthfeel. Once complete, the parcels spent a
short time on yeast lees before blending, stabilisation, filtration and
bottling.
Peak drinking
This wine has been made to enjoy now but will benefit from careful
short-term cellaring of no more than 2 years.

Food pairing
This wine has a nice textural quality which can be enjoyed without food,
or pair with seafood risotto or a light chicken salad. Avoid heavy cream
sauces and vinaigrettes.
