Harvest took place in the cool of the
night to preserve primary fruit aromatics and delicate flavour compounds. Upon
receival at the winery, the fruit was promptly destemmed and membrane-pressed,
with the juice clarified before inoculation with a carefully selected yeast
strain to facilitate a long, cool fermentation optimising the wine’s clean,
crisp flavour profile. A subsequent period on yeast lees contributed to additional
palate weight and texture enabling a persistent mousse.
