Winemaking
The lead up to Vintage 2023 was cooler than normal, with La Nina conditions producing mild summer temperatures along with nourishing rainfall. An extended ripening period resulted in wines with optimal acid retention and generous fruit flavours across all varietals. Harvesting took place between late February to mid-March, where the parcels were destemmed, crushed and fermented in Vat at 24°C. with frequent pump overs designed to increase colour extraction and phenolic accumulation. Once the ferment was dry, the parcels were pressed, racked and seeded for malolactic fermentation, ahead of maturation on premium French and American oak. Prior to bottling the parcels were blended stabilised and filtered before release.

This wine was made to enjoy now, but will improve with careful cellaring for up to 10 years.
