Winemaking: Our High Eden vineyard, characterised by lean podzolic soil and strewn with white quartz, experienced moderate rainfall in the winter followed by a dry spring. Adequate soil moisture and a mild and dry summer lead to the production of Chardonnay with optimal physiological ripeness and acid retention.
Harvested in the early hours of the morning of March 6th, our 6 tonne parcel was top loaded into a membrane press and cold settled for 24 hours. New and one year old French oak Puncheons were filled with racked juice and inoculated with Burgundian yeast strain for a cool two week ferment. The newly finished ferment was topped and let rest until the spring, after which it received monthly battonage until bottling in the winter of 2025.
Peak drinking
Skilfully made to enjoy now but will benefit from careful cellaring for up to 10 years.
