Winemaking
Once again drought conditions prevailed leading up to the 2019 harvest in our High Eden Vineyard. The dam actually ran dry and with no rain predicted all we could was pray for rain. Mother nature managed to get the vines through albeit a little less ripe than normal and likely the smallest crop since planting however the lack of rain and ground water meant fruit intensity was elevated. We decided to harvest both parcels of Shiraz and Cabernet and transport to the winery on the 15th of March which is the earliest harvest we have known from this block. The Bonsai was destemmed and crushed into 15 tonne static fermenters where it was inoculated and fermented for six days between 22 and 26 degrees. At 0.5 Baume the wine was pressed and left to complete malolactic fermentation. Once this was complete the wine was filtered and transferred to new and old French and American oak barrels. After approximately 14 months on oak, the best of the barrels were chosen to make our unique Bonsai ‘vineyard blend.’

"Superbly ripe and perfumed, the wine shows black/blueberry, cake spice, violet and toasty oak characters with a hint of cocoa complexity. The wonderfully weighted palate offers rich texture and velvety mouthfeel, leading to a gorgeously long opulent finish. At its best: now to 2034."
