Winemaking: The warm, dry conditions of Vintage 2025 delivered ideal ripening for our Pinot Grigio parcels. Traditionally grown in Northeast Italy, Pinot Grigio is typically harvested early in the season to produce a crisp and racy style with clean, zesty nuances. The variety also adapts exceptionally well to hot, dry climates, making it ideally suited to our sun-drenched vineyards. Once optimal flavour ripeness was achieved, the fruit was harvested in the cool of the night to preserve natural acidity and fruit vibrancy, then transported promptly to the winery. On arrival, parcels were destemmed and chilled prior to bag pressing, with only the free-run juice retained. The juice was clarified and inoculated with an aromatic yeast strain selected to enhance varietal expression. Following fermentation to dryness, the wine was matured on fine lees for two months to build texture, enrich mouthfeel and promote lifted, fruit-forward aromatics.

Carefully made to enjoy now but will benefit from careful short-term cellaring.
